Top Tip: Try and find gluten-free flour in the supermarket. Most aisles have a ‘free from’ section these days. Gluten free flour is usually made up of rice flour, potato flour and tapioca, so it’s a great hack if you can’t find rice flour locally and this is what gives a wonderful crunch to fried foods.

Kimchi Fritters
PREP 8 minutes COOK 12 minutes MAKES 4–6
Ingredients (Serves 2)
For the Fritters
- 150g kimchi
- 1 courgette (approx. 125g), grated
- 1 carrot (approx. 125g), grated
- 1 egg, beaten
- 85g gluten-free self-raising flour
- A small handful of fresh coriander, chopped
- ½ tsp salt
- ½ tsp black pepper
- Olive oil spray
To Serve
- Salad
- Fried egg
- Spicy sauce (optional)
Method
1. Preheat the air fryer to 180°C for 4 minutes.
2. Mix the fritter batter: In a large bowl, combine the kimchi, vegetables and egg. Fold in the flour and coriander and season well.
3. Shape the fritters: Spray the air fryer crisper plate with oil. Carefully place a large spoonful of the fritter mixture directly onto the plate and flatten slightly – it should be roughly 5cm wide. It doesn’t have to be neat, as the edges will go all crispy. Repeat with the rest of the mixture, making sure to leave enough space around each fritter.
4. Air fry: Spray with more oil and cook at 180°C for 10–12 minutes until golden and crispy, turning halfway.
5. Serve: Serve with salad, a fried egg, and a splash of spicy sauce if you like it hot!
