The Ultimate Christmas Burger

PREP 10 minutes COOK 12-15 minutes SERVES 2

 

Ingredients (Serves 2)

For the Burger

- Air fryer rack(s)

- 50g stuffing mix

- 100ml hot water

- 250g turkey mince

- 1 tsp garlic powder

- 1 tsp dried rosemary

- 6 pigs in blankets (cook extra for dipping in the gracy, if you wish)

- Olive oil spray

- 2 brioche buns, sliced in half

- 2 tbsp cranberry sauce

- 50g brie, sliced

- 150ml hot gravy

- Sea salt and ground black pepper

 

For the Slaw

- 80g Brussels sprouts, finely sliced

- ½ carrot, grated

- ½ apple, grated

- 1 tsp wholegrain mustard

- 2 tbsp mayonnaise

- Sea salt and ground black pepper

 

Method

1. Make the stuffing: Combine the stuffing mix and water in a bowl. Stir until well combined, then leave to cool for 5 minutes, or until cool enough to handle. Shape into 4 balls. 

2. Form the patties: While the stuffing is cooling, make the turkey patties. In a bowl, mix the turkey mince, garlic powder and dried rosemary. Season, then shape into two patties with your hands. Set aside. 

3. Load the air fyrer: Put the pigs in blankets into the air fryer basket, along with the stuffing balls. Spray the balls with oil. 

4. Add the patties: Place your air fryer rack/s into the basket and place the patties on the rack. Spray with oil and cook at 200°C for 12–15 minutes, turning everything halfway. 

5. Mix the slaw: Meanwhile, make your slaw by combining all the ingredients in a bowl. Season and set aside. 

6. Build your burger: Toast your brioche buns in the toaster, then spread the cranberry sauce over the bottom halves. Add the pigs in blankets first (you can cut these in half), then break up the stuffing balls and scatter on top. Add the patties and lay the Brie on top, letting it melt slightly. 

7. Serve it up: Serve with your piping hot gravy to dunk in and the slaw on the side.
